Pinot noir

This sort is often called Burgundy wine. Among the connoisseurs of wine it is mentioned as the most aromatic, rich as a perfume and sweet and spirituous like falling in love. The grapes of this sort have a very thin skin, and that´s why it has a light body and a bright color. It requires constant care and supervision, especially because of it sensitivity towards diseases.  In order to get wine of good quality it is necessary to reduce the yield. It ripens very early and is not suitable for a very hot climate.

The aroma of this wine depends highly on the area it grows on, and the most famous wines come from Burgundy. For that reason, it is also called black Burgundy wine. The traditional sorts are known for their strong aroma, and the modern ones for their lighter, fruity aroma. Except from the fact, that the taste and the smell depend on the area they come from, they also change with time. So depending on the time, we can taste strawberry, blackberry, raspberry, sour cherry, violets, cabbage, and in older wines the earthly tones prevail.

This wine is excellent for storing.

It is served with lamb, pheasant, duck, salmon and mushrooms.
